What I thought about the book

If you've been reading my blog for very long, you know I enjoy cooking, baking, and sharing recipes. My children all know their way around the kitchen fairly well, too, as they've helped me there from very young ages (yes, even my sons!). Obviously, I jumped at the chance to review this Amish cookbook!

I find it delightful. The recipes are (mostly) simple, "old fashioned"...like my grandmother may have made. Granted, we are vegetarian, but I have long been able to "tweak" recipes, using vegetarian substitutes for most meats in non-vegetarian recipes.

I enjoyed the short stories throughout, sharing how the recipe came to be, or how it's been passed down through generations, etc. There are even little helpful tips throughout.

The boys and I have tried out several of the recipes, with plans to try out many more.
Nut Caramel Oatmeal, serves 4 (which was the perfect amount for my hungry teenage boys and me)

Ingredients:
2 eggs, beaten
3 1/2 cups milk (we used unflavored/unsweetened soy milk)
1/2 teaspoon salt
1 cup brown sugar
2 cups quick oats
1/4 cup margarine
1/4 cup nuts (we used some walnuts, some pecans)

Instructions:
Mix eggs, milk, salt and sugar in a saucepan. Cook and stir until bubbly. Stir in oats and cook until bubble again. Add margarine and nuts. Cover and remove from heat. Let stand 5 minutes. Stir and serve with milk (we used almond milk).
Special Occasion Eggs, serves 6 (we halved the recipe)

Ingredients:
2 tablespoons margarine
2 cups cheese, divided
12 eggs
   chipped ham, bacon, bacon bits or sausage (we use vegetarian substitutes)

Instructions:
Grease a 9 x 13 pan (we used an 8 x 8 pan) with margarine. Sprinkle with 1 cup shredded cheese. Crack eggs and space them out on top of the cheese. Poke egg yolks but don't stir. Sprinkle with salt and pepper (we used garlic powder instead of pepper). Choose one or two meats and spread on top of eggs. Sprinkle with 1 cup cheese. Bake at 350 for 30 minutes. (We used Wham, which is a vegetarian ham-flavored product. We could also use Morning Star Farm breakfast patties, or Prosage. We'll do some experimenting!)

We've also made the Favorite Scalloped Corn, and Broccoli Bonanza. We plan to make Mama's Cinnamon Buns. Little Bit is especially wanting to try out the Hot Cross Buns, and Sesame Onion Braid. Thankfully the weather is cooling off, so we won't mind much using the oven.

This will definitely be a keeper, and one to join the rest of my recipe book collection. I may need to get copies for my oldest two children, as well as for friends of ours in Florida! Great Christmas gifts!
