Haystacks


Haystacks are similar to taco salad. They are a favorite with all of us (except maybe hubby....).

Cook up some beans, usually pintos or kidneys. Season them simply: salt, onion and garlic powder, to taste.

You will also need: lettuce (shredded or ripped); tomatoes (diced); grated cheese; sliced olives; onions (optional), chopped cucumbers (optional); diced avocado (optional); sour cream; salsa or picante, corn or tortilla chips. You could also use ketchup, ranch dressing, or french dressing, if you choose.

Each person builds a "haystack" on his/her own plate, layering it: chips; beans; cheese; lettuce; tomatoes; onions; olives; sour cream; salsa....whatever each person chooses.

We used kidney beans today, daughter's choosing. Frankly, I prefer pinto beans for haystacks.

  2. We LoVe haystacks!!! It is such a YuMmY and quick meal ♥ I really like it with homemade vegetarian chili.

  3. This makes a great summertime meal and even a quick meal for casual guests because everyone can "stack" on what they like and leave off what they don't. I enjoy making this meal with cooked rice as the bottom component and serving chips on the side. It's easy to stretch out a pound of cooked hamburger meat, too, by stirring the meat into the bean mixture.

  4. Yum! We started making tacos with beans too. And I found a new way to add flavor to beef for tacos instead of adding those high sodium seasoning packets, just add a can of mild chili beans with sauce. Has less sodium and adds protein!

  6. Yum! This is one of my favorite meals! We often use plain yogurt instead of sour cream - I just like the flavor and texture!
